Lemon Coconut Balls

Ingredients:

  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 2 cups flour
  • 1/2 teaspoon cream of tartar
  • 1 teapsoon lemon extract
  • 1 cup flaked coconut

Icing:
  • 1/4 cup butter, softened
  • 1 teaspoon grated lemon peel
  • 2 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 dash yellow food coloring
  • salt, to taste

Steps:
  • 1) Cream butter and sugar until fluffy. Add egg, vanilla and lemon extract. Blend in coconut, flour and cream of tartar. Roll into small balls (about 1") and place on ungreased baking paper. Bake at 350F degrees for 8 to 10 minutes until lightly browned. Allow to cool.
  • 2) For icing: Blend all ingredients with wooden spoon or electric mixer and ice coconut balls.

Chocolate Walnut Clusters

Ingredients:

  • 1/4 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1-ounce squares unsweetened chocolate, melted
  • 1 cup flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups of walnuts, broken

Steps:
  • 1) Cream butter and sugar until light and fluffy.
  • 2) Beat in eggs and vanilla.
  • 3) Stir in melted chocolate, and then mix in dry ingredients.
  • 4) Fold in nuts.
  • 5) Drop by teaspoon onto a greased cookie sheet.
  • 6) Bake at 350 for 10 minutes.
  • 7) Makes about 3 dozen.

Peanut Butter Cookies

Ingredients:

  • 125g butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup crunchy peanut butter
  • 1 egg
  • 1 1/2 cups self-raising flour
  • whole peanuts

Steps:
  • 1) Beat together the butter, peanut butter and sugars.
  • 2) Add the egg, mix and gradually add the flour till it forms a soft dough.
  • 3) Roll teaspoonsful of the mixture into balls and place onto a lined baking tray, leaving room enough to spread.
  • 4) Press half a peanut into the top of each.
  • 5) Bake at 160-180 degrees, 10 -12 minutes until brown.
  • 6)Transfer to wire racks for cooling.

Chocolate Butter Flakes

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 1 egg
  • 3 1-ounce squares unsweetened chocolate, melted
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoons soda

Steps:
  • 1) Cream butter till light-colored, then gradually add sugar and beat until fluffy.
  • 2) Beat in egg. Blend in chocolate and vanilla.
  • 3) Gradually add dry ingredients, mixing well after each addition.
  • 4) Press dough through cookie press onto ungreased cold cookie sheet.
  • 5) Bake 350 for 8 - 10 minutes.
  • 6) Makes 7 dozen.

Sweet Milk Doughnuts

Ingredients:

  • 4 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 3 eggs
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 4 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • 3 tablespoons soft butter
  • 3/4 cup milk

Steps:
  • 1) Mix together flour, salt, spices, and baking powder and set aside.
  • 2) Beat eggs and sugar together.
  • 3) Add vanilla, butter, milk, and dry ingredients.
  • 4) Make a soft dough and roll to 1/3 inch thick.
  • 5) Cut for doughnut thickness and drip in hot grease/oil (375 degrees).
  • 6) Serve plain or roll in powdered sugar.

Peanut Butter Fudge Squares

Ingredients:

  • 1/2 cup light corn syrup
  • 3/4 cup peanut butter
  • 1/3 cup butter, softened
  • 3/4 cup chopped pecans
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

Steps:
  • 1) Combine syrup, peanut butter, butter, salt, and vanilla. Beat well.
  • 2) Gradually add sugar to make a very stiff mixture.
  • 3) Turn out on lightly greased board, knead until well-blended, working in pecans.
  • 4) Press into buttered 8-inch square pan.
  • 5) Chill until firm and cut into 2-inch squares.
